Chef  Peter Leigh Gallin is owner of Applewood Northwest Cuisine and Catering, and a devotee to fresh, healthy Northwest cuisine. He is a graduate of the California Culinary Academy located in San Francisco, California with a curriculum focused on classical French cooking techniques. He has worked as a chef since graduation in 1988, both as a caterer as well as at numerous restaurants.

Peter is the son of an anthropologist and a sociologist and is a world traveler who has spent time living in Asia and all over North America, including the East and West Coast, the deep South, Southwest and the mid-west and Northwest. Better living through healthy eating is his motto.

General Manager Steven Waddle is an asset in the day to day operations of the restaurant and grew up assisting in family in the running of the former Portland iconic restaurant Waddle's.

 Teresa Johnson, catering event coordinator, rounds out the Applewood executive staff with true professionalism.
